Easy Korean Pork with Broccoli

This recipe tastes familiar to Beef Bulgogi, a delicious Koren beef dish my husband and I love. I’ve made this with beef, but we prefer it with tender, ground pork. Any ground meat will work in this incredibly easy dish, inspired by this recipe.

It’s a flavorful dish that comes together in less than 30 minutes and it’s perfect to make for busy weeknights. This recipe can easily be doubled if you’re feeding more than two. I didn’t plan on blogging about this, so I only have one photo of this yummy meal. This was my dish.

Easy Korean Pork with Broccoli

Serves two

Ingredients:

1/2 pound ground pork or lean beef
1 T. sesame oil
2 heaping T. minced garlic or 3 cloves garlic, minced
10 oz. broccoli florets, steamed
1/4 cup brown sugar
1/4 cup Tamari, coconut aminos (or soy sauce if you’re not GF)
1/4 teaspoon fresh ginger, minced (or 1/8 tsp. ginger powder or minced dried ginger)
salt and pepper, to taste
1 green onion, sliced

optional: 10 oz. cooked white or brown rice

Directions:

Brown the ground meat in a large pan over medium heat. Season with a little salt and pepper. When almost all the pink is gone, add the sesame oil and garlic. Stir to combine.

Once browned, drain off the fat and stir in the brown sugar, soy flavored sauce, ginger, salt and pepper. Crank up the heat to high and get the mixture boiling for a few seconds, then add the steamed broccoli and coat with the sauce. Turn the heat to medium-low and simmer for about two minutes.

We save time by heating up a bag of frozen Trader Joe’s organic Jasmine rice or organic brown rice and we split the 10 oz. bag between our two bowls.

Divide the broccoli-meat mixture between the two bowls of steamed rice, then top with green onions and serve immediately! You’ll be blown away by the delicious flavor! ENJOY!
