Golden Graham’s S’mores

Today’s recipe is a taste of nostalgia for many of us 80s kids. Our moms lovingly followed the recipe on the back of Golden Graham’s cereal and made us these tasty bars of goodness! My version calls for more marshmallows than the original recipe. Gather your ingredients, and let’s go!

Golden Graham’s S’mores (adapted from the recipe that used to be on the cereal box)

Ingredients:

8 cups of Golden Grahams® cereal
6 1/4 cups of miniature marshmallows, divided (reserve 1 1/4 until the end)
1 1/2 cups of milk chocolate chips
1/4 cup of light corn syrup
5 tablespoons of non-salted butter or margarine
1 teaspoon vanilla extract
Optional; a small handful of miniature marshmallows

Directions:
Grab two large bowls and a 13″ x 9″ pan. Into a large bowl, measure the cereal and set aside. Butter 13 x 9 inch baking dish with cooking spray or a stick of butter (neither are on the ingredient list). In large microwave-safe bowl, add just 5 cups of the marshmallows, all the chocolate chips, corn syrup and butter and microwave uncovered on High for 2 minutes to 3 minutes 30 seconds, stirring after every minute, until melted and smooth when stirred. It took 3 and a half minutes in my microwave. Stir in vanilla AFTER you microwave the mixture.

Next, pour the chocolatey mixture over the giant bowl of cereal and quickly toss it with a spatula until the cereal is completely coated. Next, stir in the reserved marshmallows and pour the mixture into the buttered baking dish. If you need a few more marshmallows, place them strategically now! Then, press mixture evenly in pan using wax paper or a buttered back of a spoon. Exercise a lot of patience and let it stand uncovered at least 1 hour, or refrigerate if you prefer a firmer bar. For bars, cut into 6 rows by 4 rows. Store loosely covered at room temperature up to 2 days.

Grab your baking dish for this no-bake recipe, and get out two large bowls. Make sure one of them is microwave safe!

Measure eight cups of Golden Graham’s cereal into a very large bowl, and six cups of mini marshmallows into a microwave-safe bowl.

Add the cup and a half of milk chocolate chips and quarter cup of lift corn syrup into the bowl of marshmallows.

Drop five tablespoons of non-salted butter into the same bowl.

Now it’s time to butter your baking dish! I used a non-stick spray, but if you want to rub a stick of butter on it instead – go ahead!

Get everything ready for the next step.

Follow the directions below and microwave the bowl of marshmallows and chocolate. Afterwards, ADD THE VANILLA! I accidentally added it before cooking it. Whoops! Then, carefully pour the hot mixture over the cereal and gently fold the chocolate in to evenly coat the cereal. Be careful not to crush the Golden Graham’s!

Be careful not to burn yourself like I did! As I held the bowl with one hand for a blurry photo I didn’t use, I burned my thumb.

Stir in the quarter cup of reserved marshmallows.

Pour the mixture into the buttered baking dish and press with a spatula or buttered spoon. I like to add a few strategic marshmallows in at this point. Doesn’t this look good?

Tear off a sheet of wax paper and press down carefully with your hands to make the s’mores compact a little.

It’s best to cover it so that family members, eager guests and pets don’t attack it.  I was on my way to a potluck, so I covered it and then cut it into bars when I arrived.
